Mom of the Year Meatloaf

When I make this meatloaf, all three of my kiddos sit in silence, stuffing their faces full.
They even ask for seconds.
It is the most glorious of all recipes (I may be a bit biased though, as the silence that accompanies all three eating at the same time could actually enhance the flavor:).
It is packed with protein and not super calorie dense. The meatloaf turns out moist without being mushy like turkey can sometimes be.
When you make this recipe, make a massive batch. I make four at a time. We eat one that day and freeze the other three.
When you freeze them, put some saran wrap on a cookie sheet, shape the meat into a loaf on top of the saran wrap, and pop it in the freezer. After it is frozen, wrap the saran wrap up and around it nice and tight.
When you are ready to use the frozen meatloaf, pull it out a day ahead of time and put it on a plate in the fridge.
Two things will happen...
1- Your family will high five you the day they eat the first loaf.
2- You will high five yourself when all you have to do is pull the meatloaf out of the freezer for meal prep the next time!
