Fresh and Meaty

That title is definitely not appealing, but it is so fitting.
These stuffed peppers are perfect for my friends who don't love large portions of meat, but need to add in more protein to their day.
Each pepper is only 4oz of a mix of ground turkey and ground beef... and they each contain 36g of protein! It's almost like magic. Only not.
Using just a tiny bit of rice and a pepper as the base of the meal keeps the calorie density low, so we can add in parmesan and mozzarella cheese, which both up the protein count.
And the fresh part- that is the pepper. I like to cook them so that they are still a bit firm. The crunch adds the freshness and when you don't cook the shit out of the pepper, it maintains a flavor closer to the raw flavor...so good!
One makes a satisfying meal for most people- unless you are training your butt off and on the higher end of a caloric intake. Then you can go ahead and have two;)
