Chicken+ Taco+Chili=LOVE

WARNING: This recipe contains all the goodness in one crockpot.
Not only is it so, so good, it is also so, so easy. With just a handful of ingredients and the ability to throw them all in the crockpot at once, it is definitely a WIN in my house.
Anytime I can create dinner in one pan or crockpot, it is a time saver and I am left with the ability to focus more of my precious evening time on my kiddos, instead of making the meal and doing the dishes.
The recipe calls for just five ingredients, but you can add anything you want to fancy it up- I'm thinking corn, black olives, and some avocado would be great additions. I went for a couple crushed up chips and some green chiles. However, the recipe is already pretty calorie dense, so you may want to do a little trade off to balance the density.
If adding the above items, I would take out the rice and use 3 cups of chopped cauliflower instead. The trade leaves you with nothing lost in terms of flavor, and nutrients gained.
One last tip...
I find that if you cut the chicken into chicken nugget size pieces before putting it in the crockpot, it shreds up easily- like, pull it apart with two forks kind of easy.
